Off-Topic Friday: Falafel Burgers and Swedish Coffee Bread

Penny and I meet one a month for lunch. Most often it’s for sushi, which is surprisingly good here in Columbus, Ohio. But occasionally we cook a meal for each other. This past Thursday it was Penny’s turn and she prepared a really terrific lunch. I’ve asked her for the recipes and I’ll share them here with you.

She served Falafel Burgers on a bed of fresh greens and radishes from her garden with her homemade Peanut Sauce. A side of cool cantaloupe (or “muskmelon” as we use to call it back on the farm) made for a nice palate cleanser and was tasty for it’s own sake. For desert, coffee (made in her Chemex Coffee Maker, which is always a treat and her Swedish Coffee Bread.
